There are two group of ingredients used in cooking: one is essential while other is optional for some dishes, but is essential for other dishes.
ESSENTIAL GROUP INCLUDES:
- Red chili. Ground, crushed, whole (sabot)
- Haldi (Turmeric). Ground
- Coriander (cilantro). Seeds, ground, green (fresh).
- Salt
- Garam Masala. It consists of whole black pepper, clove, large cardamom, small cardamom, cinnamon, bay leaves ( tez patta), white cumin seed ( whole and powder)
- Tomatoes ( fresh, paste, or crushed)
- Lemon Juice large bottle.
- White Vinegar large bottle.
OPTIONAL GROUP:
- Whip cream
- Dried plums/dried Prune (aloo bukhara) for biryani
- Pathar phool (Black Stone flower/Dagad Phool/ Dried Lichen) for biryani
- Butter
- Methi (Fenugreek) seed, dry leaves (Kasuri methi)
- Chili sauce
- Soya sauce
- Pasta sauce
- Salsa
- Chicken cubes (knorr/Maggi ) Halal
- Aginomoto( Chinese salt)
- Baking powder.
- Yeast sachet
- Kewra essence.
- Vanilla assence.
- Kalonji (Black seeds)
- Bread crumb
- Corn starch
- Basin (Gram powder)
- Sour cream
- Oregano powder
- Thyme leaves powder
- Basil leaves powder
- White Pepper.
- Mozzarella cheese grated.
- Cheddar cheese grated.
- Barbecue sauce.
- Mayonnaise.
- Tomato Ketchup.
A close friend of mine just requested me to provide a comprehensive recipe of making a delicious "Chana Masala". He says that he is trying to get expert in Indian food making and so he needs help. ReplyDeleteI always wanted to have everything at home before beginning to cook so that I do not get stuck up in the middle or get stopped from cooking any difficult/ but tasty dish.
I am happy that you liked the list. It is always a good idea to keep everything in house before starting to cook. This reduces a lot of setup time and makes cooking easy and joyful.
