Kheer for sugar conscious persons:

Ingredients:

Milk: 2 liter
Rice: 1/2 cup wash and soak in water for 1/2 hr then break them with hand.
Condensed Milk: 1 can
Green  Cardamom: 10

For Garnishing:

Pistachio: 10, cut finely
Almond:10,cut finely
Kewra water: 1 Teaspoonful

Recipe:
·         Boil milk with green cardamom, then slow down heat to medium flame for 1 to 1 1/2 hr till it become thick with yellowish ting.
·         Now add rice and 1/2 liter of water and keep on medium flame and stir off and on
·         When milk start boiling then slow down the heat, let it cook for 1 hr and stir occasionally.
·         Now check the rice when they  soft and milk became thickened then mash the rice well with spoon and stir continuously to avoid  sticking at base of pan
·         Now add a can of condensed milk stir constantly and mashing rice with spoon.
·         Check the thickness by pouring a small amount of kheer in a plate.
·         Sprinkle Kewra water 1 teaspoonful over the kheer
·         Pour the kheer in a large bowel and garnish it with Pistachio and almond.
   (Note: Same thing you can do with Feerny i.e don't add sugar and increase quantity of canned milk)

Meethy Tikiyan (  Special Sweet Biscuits)

This special dish used to be  mostly made on 22nd Rajab. It is a traditional occasion, when  these meethy tikiyan are served with Kheer along with certain salty dishes like Dahi baray, Cholay, Aloo puri or Biryani. My special recipe for Meethy Tikiyan ( Special Sweet Biscuits) is given below:

Ingredients:

White flour: 2 cup
Suji ( Semolina): 3/4 cup
Milk: 1/2 cup
Sugar: 1/2 cup or as desired
Oil: 1 cup
Salt: 1 Pinch( optional)
Green cardamom: 5(crushed to make powder)

Recipe:

·         Take white flour, suji( samolina), green cardamom powder and 1/2 cup of oil in a dish and mix well.
·         Take 1/2 cup warm milk, dissolve sugar in it and knead  the flour with this mixture.
·         .Make a hard dough, don't add water in it.
·         Now make small tikyan (biscuits)  cut with a glass rim to make same size.
·         Take a frying pan,heat 1 teaspoonful of oil and shallow fry them on a very low flame to avoid burning, turn upside down carefully.
·         In the same way fry all, and keep them separately on a tray untill they cool down.

Preparation Time: 45 min.

Kheer of Sweet Potatoes:

Ingredients:

Milk : 2 liters
Sweet Potatoes:  500 grams
Sugar: 1 cup or as desired
Condensed milk : 1 can
Green Cardamoms: 10

For Garnishing :
Pistachios and Almonds
Kewra Water: 1 Teaspoonful

Recipe:

·         Boil milk with cardamoms  for 1/2 hr
·         Boil sweet potatoes, peel of skin and mash with fork and spoon.
·         Add it in milk and continue to cook until thickened.
·         Then add condensed milk and 1/2 cup of sugar and taste the sweetness, if less then add more and cook.
·         Check it by putting small amount in a plate.
·         Then  pour it in a bowel  and garnish it with pistachios and almonds
 Sprinkle kewra water over it.

Preparation Time:  1 1/2 hrs 

Gajer ki kheer:

Ingredients:

Milk: 1 1/2 liter
Carrots: 3 ( Wash, peel and do kadukash so they finely cut)
Rice: 1/2 cup wash and soak in water for 15 min then grind them .
Sugar: 1 cup
Green Cardamom:10

For garnishing:

Pistacheo and almond : 10, 10 cut in the same way as before.
Kewra water: 1 Teaspoonful.

Recipe:

·        Boil milk, cardamoms and crushed carrots for 1 hr at slow heat so that milk become thickened and carrot became tender.
·        Now add rice with water  and stir continuously and cook for 1/2 hr
·        Then add suger in it  and stir continuously till it thickened.
·        Note: You can check its thickness by putting a spoon of kheer in a plate and wait for a while , if it is ready it will not move by moving the plate.Same procedure can be used in any kheer thickness
·        Now pour kheer in a large  bowel and garnish it with kewra water, almonds and pistachios .

Preparation time: 1 1/2 hrs

Traditional Tasty Kheer:
Ingredients:

Milk: 2 liter

Almond:10,( soak both of them in warm water for 15 min then peel off their skin and cut finely to sprinkle over the kheer.

Kewra water: 1 Teaspoonful

Recipe:
·         Boil milk with green cardamom, then slow down heat to medium flame for 1 to 1 1/2 hr till it become thick with yellowish ting.
·         Now add rice and 1/2 liter of water and keep on medium flame and stir off and on

Ingredients:

Milk: 1 1/2 liter
Rice: 1/2 cup, wash and soak in water for  1/2 hr then grind them .
Condensed milk: 1/2 can
Green cardamom: 10
Sugar: 1/2 cup or as desired

 For garnishing:

Pistachios: 10
Almonds: 10 ( soak them in warm water for 15 min then peel them off and cut finely)

Kewra water: 1 Teaspoonful

Recipe:

1.       Boil milk and green cardamom , then slow down the flame to medium till the milk thickened.
2.       Now add grind rice with water in milk and stir continuously  to avoid any lumps formation and to avoid sticking in the base of pan.
3.       When the kheer thickened add condensed milk and  sugar in it  and cook with stirring for 10 more min.
4.       Sprinkle Kewra water 1 teaspoonful over it  and stop the burner.
5.       Pour the Kheer in a large bowl, and Garnish it with pistachios and almonds

Subway Burger

It is one of the most eaten snacks internationally; today I am going to tell you its quick and easy recipe.It can be made with chicken,beef,  ground beef or chicken, or vegetables like carrot, beans mushrooms etc.Recipe will remain the same.

Things Required:

Foot long plain burger: 6
Boneless Chicken/beef (very small cubes): 1 lb or( ground chicken or beef)
Mozzarella cheese (shredded): 1 lb
Ground Red Pepper: 1 Tablespoonful
Salt: 1 Teaspoonful
Oil: 2 Tablespoonfuls
Garlic (crushed): 3 cloves
 Basil leaves: ¼ Teaspoonful
Onion: 1 (cut round)
Capsicum: 1 (Cut one inch elongated)
Lettuce: 1
Tomato: 3( cut elongated)
Cucumber: 2 ( cut finely)
Pasta tomato sauce: 3 Tablespoonfuls

Recipe:

1.       Preheat oven at 350 degree for 15 min
2.       Fry garlic in oil, then add chicken and fry well till water dry.
3.       Now add red pepper, salt and pasta sauce, dry basil leaves and continue to fry at medium heat till chicken tender, it will take 10 min.
4.       Now take burgers cut them elongated in such a way that they remain united at one side
5.       Now fill them with chicken, onion, capsicum and lettuce.
6.       Sprinkle mozzarella cheese over them.
7.       Put the prepared burger in a large oven tray and bake them for 10 min.
8.       Your subway burgers are ready to eat , serve them with salsa or tomato ketchup.

Rasmalai:

It is a delicious sweet dish which is favorite of almost all Indians and Pakistanis but now days it is very expensive in market, there fore I think if you try to make it at home then you enjoy more  and it will also become cost effective.

Ingredients:

Powdered milk: 1 cup
Egg: 1(Beaten)
Baking powder: 1/2 Teaspoonful
Oil: 1 Tablespoonful
Milk: 1/2 Liter
Suger: ½ cup or as desired
Green Cardamom: 4 whole or crushed
Pistachios: 8(cut finely to sprinkle over rasmalai)

Recipe:

1.       Take Powdered milk, oil, baking powder and beaten egg in a bowel and knead it to make a soft dough, Keep it aside to 15 min.
2.       Boil milk and green cardamom for 10 min then add sugar in it.
3.       Now make small balls then press them to make the shape of rasmalai.
4.       Now add them in boiling milk carefully and continue to boil for 5-8 min ( check them with finger till they soft ).
5.       When they cool , take them out with spoon carefully in a large bowel and sprinkle Pistachios over them.

Afghani Pulao (Kabuli Pulao)



It is very delicious and different from our pulao, my children were liked it very much. One day they brought me in Afghani Restaurant in Parsippany New Jersey. Now I am going to tell you its recipe. It is a traditional recipe made by Chef Zakir of Karachi. I will also give you its easy recipe later on.

Ingredients:

Rice (Basmati long rice): 2 cups
Brown Kishmish: 100 grams
Carrots: 2(crush in Kadukash/Finely cut length wise)
Chicken: 250 grams (small pieces without skin, boneless)
(You can also make it with lamb or beef)
Onion: 1 finely cut and fry till dark brown then chop it in chopper to make a paste
Oil: ½ cup
Black pepper: ½ tablespoonfuls
White cumin: 1 Tablespoonful
Salt: 1 Teaspoonful for chicken and 1 Tablespoonful for rice

Traditional Recipe:

1.       Fry chicken in oil and add half teaspoonful of salt to enhance the flavor, fry till chicken brown.
2.       Fry 100 gram of kishmish, then add carrot black pepper and ½ teaspoonful of salt.
3.       Now add fried chicken cubes and paste of brown fried onion.
4.       Now boil 4 cups of water with 1 tablespoonful of salt and white cumin seeds 1 tablespoonful
5.       When it boil then add rice in it and cook till half cooked, then drain water through strainer.
6.       Take 1 teaspoonful of oil in a pan and add half of boiled rice  to make a layer then add chicken in the form of layer, then add rest of rice
7.       Add one tablespoonful of oil over the rice
8.       Now keep it over a slow flame from the start for 15 mins then do upside down with spoon carefully, now if rice is not ready then again keep over very slow flame .Now Afghani  pulao is ready. Usually it is served with a special white sauce.

9.       White Sauce: Take 3 tablespoonfuls mayonnaise, 3 tablespoonfuls of milk, mix well with fork and add a pinch of black pepper and a pinch of salt.

Preparation Time: 1 hr

Quick and easy recipe:

1.       Fry chicken in oil and add half teaspoonful of salt to enhance the flavor, fry till chicken brown.
2.       Now fry onion in oil till dark brown then add I tablespoonful of white cumin.
3.       Now  add  100 gram of kishmish, then add carrot, black pepper and ½ teaspoonful of salt.
4.       Now add fried chicken and rice in it.
5.       Now add 3 cup of water and put it over high flame and add 1 tablespoonful of salt in it.
6.       When the water somewhat dry and rice more than half cook, shake it with spoon upside down.
7.       Slow down the flame or keep it in a rice cooker for 10-15 mins.
8.       Now Afghani pulao is ready. It takes a very short time but the flavor is same.
