Meethy Tikiyan (  Special Sweet Biscuits)

This special dish used to be  mostly made on 22nd Rajab. It is a traditional occasion, when  these meethy tikiyan are served with Kheer along with certain salty dishes like Dahi baray, Cholay, Aloo puri or Biryani. My special recipe for Meethy Tikiyan ( Special Sweet Biscuits) is given below:

Ingredients:

White flour: 2 cup
Suji ( Semolina): 3/4 cup
Milk: 1/2 cup
Sugar: 1/2 cup or as desired
Oil: 1 cup
Salt: 1 Pinch( optional)
Green cardamom: 5(crushed to make powder)

Recipe:

·         Take white flour, suji( samolina), green cardamom powder and 1/2 cup of oil in a dish and mix well.
·         Take 1/2 cup warm milk, dissolve sugar in it and knead  the flour with this mixture.
·         .Make a hard dough, don't add water in it.
·         Now make small tikyan (biscuits)  cut with a glass rim to make same size.
·         Take a frying pan,heat 1 teaspoonful of oil and shallow fry them on a very low flame to avoid burning, turn upside down carefully.
·         In the same way fry all, and keep them separately on a tray untill they cool down.

Preparation Time: 45 min.
